For years now, I have successfully discontinued the use of popular seasoning cubes in my cooking and I use natural alternatives.
Here is why:
Commercial seasoning cubes and others in same category are actually food additives.
In popular media adverts, they are tagged ‘BRAND OF MONOSODIUM GLUTAMATE’, otherwise known as MSG.
Monosodium glutamate belongs to the larger group of chemicals that are labeled “glutamate.”
In fact, it is found naturally in many protein-containing foods, including cheese, milk, meat, fish and a number of different vegetables.
The levels of MSG are particularly high in foods like tomatoes and cheese.
Glutamate is a key component in determining the flavor of these foods, however it only functions as an enhancer when it is in its “free” form (like seasoning cubes) not when it is bound with other amino acids in proteins.
Today, MSG is generally derived from starch, corn sugar, molasses, sugar cane or sugar beets.
MSG has no texture or smell of its own, and therefore serves to emphasize the natural flavor of the food itself, rather than adding an independent flavor.
Monosodium glutamate is a taste enhancer and flavour enhancing additive for the human diet.
MSG is currently found in thousands of different processed foods, including salad dressings, mayonnaise, canned foods, canned fruits, canned vegetables.
As a food enhancer, glutamate can provide significant nutritional benefits by increasing food intake, particularly for the elderly for whom losses in taste and smell contribute to poor nutritional status and I feel this is alright in this group of elders as they can be pretty difficult to handle as they age.
MSG makes food taste so nice, nicer than the food really is.
MSG makes food taste like FICTION, not FACT.
