Do you love Nigerian walnuts? We’ll they are in season.
Recently, I was in the car with my cousin. While held up in traffic, hawkers selling these walnuts flooded the car windows.
I wanted some and asked if he was interested. He replied in the negative. I asked him if he knew the benefits of eating walnuts and he had no clue. When I shared the secret, he immediately developed love for Nigerian walnuts.
I have quite a chunk of leftover walnuts and because it is rainy and cold here I made these NIGERIAN WALNUT MUFFINS which is just another way to eat walnuts.
• 1-½ Cup whole wheat flour
• 1 teaspoon each of baking soda and baking powder
• ½ teaspoon salt
• ½ tsp. cinnamon
• ¼ tsp. nutmeg
½ teaspoon vanilla extract
• ⅓ cup of honey
• 1 egg
• ½ cup of unsweetened plain yogurt
• ⅓ cup of coconut oil
• 1-½ cup crushed apples
• 1 cup of walnut chunks
Preheat oven to 200 degrees. In a mixing bowl, mix flour, baking soda, baking powder, salt, and spices.
In another bowl, mix honey, egg, yogurt, oil, vanilla, apples, and walnuts.
Add wet ingredients to dry ingredients. Fill typical size greased muffin cups ⅔ full. Bake at 200-250 degrees for 15 minutes.
Serve with any drink of your choice.
